Disconnecting the speaker wire from the logic board would be the simplest route. It's on it's own next to the airport slot Diagram is on page 14 (15th page of the online document, including the front cover).
I know, but then you can't use the speaker for sound if you don't have the MacMini connected up to a monitor or sound system, so I kept the best of both worlds, as such.
What is needed is the StartupPrefs to be programmed for the MacMini for use on MorphOS then I wouldn't need to have to do all this messing about via the Mac OS X, but hey, it works OK for me, as I also use the Mac OS X on the odd occasion.

@Newsense - nice setup, is the external drive USB, or Firewire?
What I have is an Iomega MiniMax 500GB which can use either USB or Firewire - it is a hub for both, but I suppose the USB is used by MorphOS, though I know there is some limited Firewire support as a 3rd party driver has been written, but I've not yet tried it out properly, as I've just bought a Firewire DVD-RW device, and so I'll give that a try out soon.
The DVDRW enclosure has a Firewire to IDE interface for the DVDRW inside it, so I wonder if I connected up a HDD through that interface if it would work as an external HDD as well instead of it just being a DVDRW, maybe even allow a Master and Slave setup on the IDE circuit - but nice to have anyway.
There were other MiniMac HDD enclosures made, one by Micronet called the MiniMate, Lindy made two, one is just a HDD USB accessed enclosure, and the other LINDY USB 2.0 HDD enclosure for the Mini but which has NAS (Network/Ethernet accessibility) these enclosures are for 3.5" HDDs both SATA & IDE Drives.
There was another USB hub designed for the MacMini by Plasticsmith which was called the Mac Mini Shack, but I believe PlasticSmith are no longer trading.
Anyway, here's the link to the MiniMax information.
